Red Velvet Cookie in a Cup

I was going to save this recipe for closer to the holidays, but I just can’t wait. I have tried on and off for months to perfect a Red Velvet Cookie in a Cup. It was never quite right, but inspiration struck and a secret ingredient gives this microwave cookie the signature red velvet color and flavor. Just like my other cookie in a cup recipes, you can have a warm, fresh, homemade cookie in just a few minutes.

Red Velvet Cookie in a Cup

1 Tablespoon Butter

1 Tablespoon Granulated White Sugar

1 Tablespoon of firmly packed Dark Brown Sugar

3 Drops of Vanilla Extract

Small Pinch of Kosher Salt

1 Egg Yolk (discard the egg white)

2 Tablespoons of flour

2 Tablespoons of Red Velvet Cake Mix (I used Duncan Hines Premium Red Velvet Mix)

Start by melting your butter in the microwave. Add sugars, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour and cake mix, then stir again. Cook in microwave about 60 seconds. Let cool a minute or two. Cookie will be soft at first and will become chewier as it cools.

Serve warm.

Sprinkle a little bit of powdered sugar on top to make it pretty, and enjoy.

  4. I am loving all these cookie-in-a-cup recipes!! As someone who doesn’t cook or bake and also has gastroparesis (I basically can’t eat more than a few bites at a slow rate a few times a day) I am super excited to find easy recipes that don’t require making an entire batch when one wants just a serving. I have a question: for a vegan version, what would one use to substitute the egg yolk? There is a lot of info out there on subbing for egg WHITES but not the yolk. Is the yolk merely for moisture? I did read that if it’s just for moistness than any liquid including plain water could be used. What do you think?
