Earlier this week, my friend Meghan was asking about ideas for a boxed brownie mix she had on hand. It reminded me of these fun Oreo Stuffed Brownies I made a few months ago. Then, when my husband needed a last minute snack to take to his class tonight, I thought these would be perfect.
I love baking from scratch, but I also love playing around with these quick and easy recipes. Especially when you are baking for a crowd! And really, who doesn’t love Oreos? You are pretty much guaranteed to have a crowd pleaser on your hands when you include Oreos!
All you need are a package of Double Stuf Oreos, a box of brownie mix (ingredients to prepare brownie mix) and baking cups. I found these cute Wilton baking cups at Target. Red, yellow, and blue, perfect Oreo colors!
Start by preheating your oven to 350 and preparing brownie batter according to directions on box. I used the variation for fudgy brownies.
Line a muffin pan with baking cups, and lay a whole Oreo in the bottom. Don’t do anything to it. Just toss it in there.
Spoon prepared brownie batter over Oreo cookie. I used a 1/4 measuring cup and made 18 brownies in all.
Then, add a few coarsely chopped Oreos to the top.
Bake at 350 for 25-30 minutes and you’re done! If you use a different brownie mix, keep a close eye on the brownies as the cooking time may vary.
