Her love of Honey Bunches of Oats on yogurt inspired me to use in it this Pumpkin Spice Greek Yogurt Parfait. Greek yogurt with a touch of sweetness and vanilla, layered with real pumpkin combined with brown sugar and warm pumpkin pie spice all topped with the sweet flakes and crunchy oats in Honey Bunches of Oats. It’s really delicious!

Start by preparing and chilling your pumpkin mixture. The pumpkin can taste a little mushy at room temperature, so we preferred it chilled in the yogurt parfait. Once the pumpkin picture is chilled, you can assemble the parfaits.
I used plain greek yogurt and sweetened it with a little regular sugar and vanilla extract for this recipe, but vanilla favored yogurt would would perfectly too.
Assemble the parfaits starting with yogurt, then a sprinkle of Honey Bunches of Oats, the chilled pumpkin mixture, another layer of Honey Bunches of Oats, another layer of yogurt and a final sprinkle of Honey Bunches of Oats. Finish with a dusting of pumpkin pie spice.
- 1 cup of 100% pure pumpkin
- 2 tablespoons of brown sugar
- 1 teaspoon of pumpkin pie spice
- 1 cup of plain greek yogurt
- 1 teaspoon of pure vanilla extract
- 1/2 tablespoon of regular sugar or sweeter of choice
- 1 1/2 cups of Honey Bunches of Oats
Stir together pumpkin, brown sugar and pumpkin pie spice and chill.
Once pumpkin mixture is chilled, stir together plain greek yogurt, sugar and vanilla extract.
Create parfait by layering from the bottom up. Yogurt, Honey Bunches of Oats, Pumpkin Mixture, Honey Bunches of Oats, Yogurt and finish with Honey Bunches of Oats and a sprinkle of Pumpkin Pie Spice.
