Zucchini and Parmesan Pasta

Ingredients

  • 4 small or 2 large zucchini
  • 2 tablespoon of olive oil
  • 1 pound of fettuccine or spaghetti
  • 2 cloves of garlic minced
  • kosher salt and freshly ground pepper to taste
  • 1 cup of freshly shredded parmesan cheese

Instructions

  1. Start by shredding zucchini using largest holes on a box grater.
  2. Cook pasta according to directions on box.
  3. In a large saute pan, heat olive oil over medium heat.
  4. Saute garlic for 1-2 minutes until softened but not browned.
  5. Add zucchini to pan and season with 1/2 teaspoon of salt and pepper to taste.
  6. Sauté for about five minutes, just until tender.
  7. Add cooked pasta to pan and mix to combine.
  8. Stir in parmesan cheese and season with additional salt and pepper as needed.
