Baked Chicken Tenders

  • 2 pounds boneless skinless chicken tenders
  • 1/4 cup of olive oil
  • 1 cup of plain breadcrumbs
  • 1/2 cup of panko breadcrumbs
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of kosher salt
  • Several turns of freshly ground black pepper
  • 1/2 cup of freshly grated parmesan cheese
  • 1/4 cup of freshly chopped parsley
  • nonstick cooking spray


  1. Preheat oven to 425 degrees.
  2. Line baking sheet with foil or parchment paper.
  3. In a shallow dish or pie plate, combine breadcrumbs, garlic powder, salt, pepper, parmesan cheese and parsley.
  4. Pour olive oil in a small bowl.
  5. Dip chicken in olive oil to lightly coat, then in breadcrumb mixture and lay on baking sheet.
  6. Repeat until all chicken has been breaded.
  7. Spray lightly with non stick cooking spray and bake 20-25 minutes.
