This Spooky Eyes Halloween Cake is so cute and fun to make. Homemade chocolate cake with a rich Oreo buttercream frosting, and the spooky eyes take just minutes to make!

Ingredients

Chocolate Cake

  • 2 cups sugar
  • 1 3/4 cups flour all-purpose
  • 3/4 cup Hershey's Cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup water boiling

Frosting

  • 1 cup butter softened
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract
  • pinch salt
  • 1/4 cup heavy cream
  • 8 Oreo cookies crushed

  • Oreo Cookies
  • Junior Mints
  • Mini Oreo Cookies
  • Brown M&M'S
  • Black Licorice Nibs

Instructions

Cake

  1. Preheat oven to 350 degrees. Grease 9x13 cake pan and dust with cocoa powder. In a large mixing bowl, combine sugar, flour, cocoa, baking powder, baking soda ansd salt and whisk together. Add eggs, milk, vegetable oil and vanilla extract and beat with a hand mixer until well combined, scraping bottom of bowl as needed. Slowly add boiling water and mix until combined. Bake 35-40 minutes. Let cake cool completly before frosting.

Frosting

  1. In the bowl of a stand mixer fitted with a paddle attachment, beat butter and powdered sugar until smooth. Add vanilla extract, salt and heavy cream and mix until smooth. Stir in crushed Oreos. Reserve a small amount of frosting to use as adhesive for the cookie eyes.

Spooky Eyes Decorations

  1. While the frosting is still soft, carefully separate Oreo cookies and place them cream side up on top of cake. Use a small dab of frosting to adhere Junior Mints to full sized Oreo cookies and M&M'S to mini Oreo cookies.

  2. If adding eyebrows, cut black Nibs into quarters length wise and place over eyes.

  3. Store cake covered. If making ahead, frost cake and wait to add eye decoration until day of serving.

Recipe Notes

For this recipe, I used a hand mixer for the chocolate cake batter and a stand mixer for the frosting. You can use a hand mixer or a stand mixer for either one interchangeably.
