  • 1 pound hot Italian turkey sausage
  • 2 tablespoons of tomato paste
  • 8 oz uncooked ziti or penne pasta
  • 1 28 oz can of crushed tomatoes
  • 1 14.5 oz can low-sodium chicken broth
  • fresh flat leaf parsley or basil leaves
  • 2 cups of freshly shredded mozzarella cheese
  • 1/2 cup of freshly grated parmesan cheese
  • kosher salt and freshly ground black pepper

  1. In a 4 quart saute pan, saute onions and garlic over medium heat until onions start to soften.

  4. Stir in crushed tomatoes, chicken broth, uncooked pasta, 1/2 teaspoon of salt and several turns of freshly ground black pepper.
  5. Bring up to a simmer, cover and reduce heat to low.

  9. Replace lid and let stand covered off heat until cheese has melted.
