Chicken Broccoli Casserole with Quinoa

  • 4 1/2 cups low-sodium chicken broth divided
  • 2 cups uncooked rainbow quinoa rinsed and drained
  • 2 tablespoons olive oil divided
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 6 cups chopped fresh broccoli florets
  • 1 rotisserie chicken, shredded, bones and skin discarded
  • 8 oz freshly shredded sharp cheddar cheese divided
  • 1/4 teaspoon garlic powder
  • 1/2 cup panko bread crumbs
  • kosher salt and freshly ground black pepper


  1. Preheat oven to 400 degrees and spray 9x13 baking dish with non stick cooking spray.

  2. In a medium size pot, bring 2 1/2 cups of chicken broth to a boil. Add rainbow quinoa and stir, reduce heat and simmer for about 14 minutes, or until chicken broth is absorbed. Fluff quinoa with a fork and remove from heat. Alternatively, see notes below for cooking quinoa in the Instant Pot. 

  3. In a 6 quart stock pot, heat butter over low heat and add onions and garlic to sauté. Once onions have started to soften, sprinkle in flour and cook stirring 1-2 minutes.

  4. Add milk and 2 cups of chicken broth to stock pot, bring to a boil and whisk 1 to 2 minutes more. Once mixture has thickened slightly, stir in broccoli, 1 1/4 teaspoon of salt and 1 teaspoon of freshly ground black pepper. Cover and simmer broccoli for about 3 minutes to partially cook broccoli before baking. 

  5. Stir in quinoa, shredded chicken and half of shredded cheese. Transfer to baking dish and top with remaining half of shredded cheese.

  6. In a small bowl, combine 1/2 tablespoon of olive oil, bread crumbs, 1/4 teaspoon of garlic powder, 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper. Sprinkle over top of casserole. 

  7. Bake uncovered for about 20 minutes, or until casserole is hot and bubbly and the top is golden brown. 

Recipe Notes

To prepare quinoa in the Instant Pot, reduce chicken broth to 2 cups. Add chicken broth and rainbow quinoa to Instant Pot. Set Instant Pot to manual mode on High Pressure for 1 minute, let Natural Pressure Release.
