If you like my one-pot chicken burrito bowl recipe, you’re going to love this cheesy taco rice! Hearty ground beef and rice, seasoned with my favorite taco seasonings and topped with delicious melty Colby-jack cheese. Easy to make, and absolutely delicious as leftovers! You might just already have everything you need to make this pantry-friendly dinner.

Ingredient for One-Pot Taco Rice
- Olive oil – for sautéing and for toasting the rice. You can use any cooking oil, or even butter.
- Aromatics – onions, jalapeno, and garlic
- Ground Beef – Use extra lean ground beef to avoid having to drain the meat.
- Rice – the recipe was developed using extra long grain rice. Using a different rice may change how much liquid is absorbed.
- Low-sodium Beef Broth – use low sodium beef broth or low-sodium chicken broth
- Fire-roasted Diced Tomatoes – substitute regular diced tomatoes, if preferred
- Fire-roasted Corn – use regular canned corn or frozen corn
- Black Beans – use black beans or pinto beans
- Tomato Sauce
- Seasonings – garlic powder, onion powder, chili powder, cumin, paprika, kosher salt, and freshly ground black pepper
- Cheese – shredded Colby-jack cheese or any Mexican cheese blend
- Fresh Cilantro – green onions are great for topping too

How to Make Cheesy One Pot Taco Rice
- In a large sauté pan or braiser, sauté onion, jalapeños, and garlic and then add ground beef.
- Once ground beef is cooked through, push to the side of the pan so you can toast the rice.
- Stir in beef broth, canned tomatoes, corn, black beans, and seasonings.
- Cook covered over low heat until rice is tender. Stir in shredded cheese and top with additional cheese.
- Top with fresh cilantro.

Recipe Tips
- Adjust the heat between low and medium-low as needed, depending on the stove. A good rule of thumb is to use the same heat level as you do when cooking plain rice on the stovetop.
- Substitute taco seasoning for the individual seasonings.
- This recipe is really flexible. As long as you keep the ratio of liquid and rice the same, you can switch up the ingredients easily.
- The leftovers are really good! Makes a good meal prep.

Ingredients
- 3 tablespoons olive oil divided
- 1/2 cup onion diced
- 1 jalapeño minced
- 3 cloves garlic minced
- 1 pound extra lean ground beef
- 1 cup extra long grain rice
- 2 1/2 cups low-sodium beef broth
- 1 14.5 oz can fire-roasted diced tomatoes drained
- 1 15 oz can fire-roasted corn drained
- 1 15 oz can black beans drained
- 1 8 oz can tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cups Colby jack cheese shredded
Instructions
- Sauté onions and jalapeño in 2 tablespoons of olive oil over medium heat until they start to soften. Add garlic and sauté for another minute. Add ground beef to pan and cook, breaking up as it browns.
- Push ground beef mixture to one side of pan and add remaining olive oil to other side of pan. Add rice to remaining olive oil and brown until rice is lightly toasted. Stir ground beef and rice together and add in beef broth. Stir in tomatoes, corn, black beans, tomato sauce, and all seasonings. Bring to a simmer, cover, and cook on low to medium-low for 20-25 minutes until rice is tender. Taste and adjust seasoning as needed. Turn off heat and stir in 1 cup of cheese. Top with remaining cup of cheese and cover and let melt. Top with fresh cilantro.
