Easy Crock Pot Pot Roast with Gravy

My family loves this Easy Crock Pot Pot Roast, and it is so easy to make! The best part about this recipe is that it makes its own gravy. You can serve it over mashed potatoes without having to thicken it, or add anything. That’s my kind of slow cooker recipe. This is one first recipes I made for my husband when we were newlyweds, ten years and two kids ago! He’s still a big fan. 

All you need is a three pound chuck roast, two cans of cream of mushroom soup, one envelop of Lipton onion soup mix, and seasoning. Just like my Mexican Stuffed Bell Peppers, this crock pot recipe requires no precooking. Though you can certainly sear it if you are so inclined. 

Easy Crock Pot Pot Roast with Gravy

In your slow cooker, mix the two cans of cream of mushroom soup and one envelop of dry onion soup mix. That’s it. Don’t add water, or beef broth or any other liquids as it will make your gravy too thin.

Season the chuck roast with salt (go easy since the soups have a lot of sodium in them already), pepper and garlic powder, and add to slow cooker.

Cook the pot roast on low for 9 – 10 hours, until the meat is tender and falling apart. The meat and gravy are unbelievably flavorful and tasty. So good over homemade mashed potatoes,  a perfect weeknight meal!

serves 4 -6

3 pound chuck roast

2 cans cream of mushroom soup

1 packet of dry onion soup mix

salt

pepper

garlic powder

In your slow cooker, mix the two cans of cream of mushroom soup and one envelop of dry onion soup mix. Season the chuck roast with salt (go easy since the soups have a lot of sodium in them already), pepper and garlic powder, and add to slow cooker.

Cook the pot roast on low for 9 – 10 hours, until the meat is tender and falling apart. 

Serve with mashed potatoes and side of veggies, or a crisp salad. 

You can make this meal super quick by using the steam and mash potatoes from the freezer section. They are a nice shortcut, and you still have the yummy flavor of homemade.

        Jackie, do you add the HV Ranch pkt. to the soup mixture or pour over the roast while cooking?
        For those of us that needs to watch sodium content, I would buy the low-sodium Cream of mushroom soup. You’re going have a lot of sodium in the canned soup, dehydrated onion soup mix and if you add the HV ranch pkt. that’s adding flavor but also lot of sodium. Sounds yummy to me and I’d like to try it.
        Any left overs will be good used the next day for hot roast beef sandwiches, or just warmed over with another vegetable or salad.

      Yes, just let it go for 4-5 hours and check for tenderness.

      Just look for an inexpensive cut that is good for braising. Just let the butcher know you want a cut for pot roast and they can direct you:0)

      I’ve never made this particular recipe that way, but I’m sure you could! Just keep in mind you will be simmering those veggies in a gravy mixture. I really prefer to have the gravy over mashed potatoes:0)

    I use this recipe but I sear the roast on all sides before putting it in the crackpot. I’ve tried it both ways and I think iits better seared. Just my opinion.

      This recipe creates a gravy, so if you are ok with your potatoes and carrots in gravy then I say try it:0) We really like the gravy served over mashed potatoes.

    This is very much the same recipe that I use for my pot roast. However, in place of the mushroom soup (which sounds fabulous) I used a couple of cans of diced tomatoes. The onion soup mix adds a great flavor. I have not used the crock pot for this…..but love the idea.

    My bf made this today exactly as written, except we couldn’t find chuck roast (we used blade instead), and both the roast and gravy were soooo delicious! Mashed potatoes, carrots and corn on the side. It was the perfect supper 🙂 We’ll definitely be making this again and again. Thank you for the recipe!!

    Made this for Sunday dinner today. Very tasty!! I did change it up a bit. After seasoning the meat with pepper and garlic powder, I browned it in an iron skillet with some olive oil. Once I moved the roast to the slow cooker, I deglazed the skillet with some water, because I had no red wine, and poured the pan juices into the slow cooker. I placed some whole carrots, celery chunks and quartered onion on top. Thanks for the tip on serving with mashed potatoes. We liked that so much more than potatoes cooked with the meat.

    How much gravy does a single batch make? I’m going to be cooking 6 lbs.+. Would you recommend doubling the soup and onion mix?

    I love this roast. Been making it for years. So simple and so full of flavor. I’ve also used package of brown gravy if I did not have dry soup. I also use same recipe with hamburger patties.

    This sounded so good, but I had to really adapt to my time frame and ingredients. Instead of using the crock pot I used stove top and meatballs in a pot roast recipe packet and beef stock. After about 2 hours I put ranch dip mix I had made in sauce to help thicken and add some yum factor. This went over mashed potatoes. Thank you for sharing this delicious recipe and I just wanted to let you know what you inspired me to try.

    I don’t know if I’ll get a response right away but I want to make this pot roast but it’s 1230 already and it says to slow cook for 9-10 hours. That’s put dinner out to 930/10pm. hmm. If I put it on high for an hour or two will that make it not so tender or is that ok??

      Oh no, I’m sure you figured something out at this point! You may have got away with 6 hours on high, or braise in the oven for about 4 hours.

    I make a very similar recipe and save half the leftovers for a second dish of beef stroganoff by adding sour cream (8oz) and mushrooms and serving over egg noodles–very tasty and family loves both dishes!

    I’d love to make this, but I’m looking for a substitute for the cream of mushroom soup…I love the soup, but hubby wont touch it. He’s ridiculously picky.

    Can I use another flavor ‘cream of’ soup? does anybody have any suggestions what I can use?

    This is so easy, and so good! I brown the meat with garlic & salt then deglaze the pan with a little red wine & add that to the crock pot with the soups. I’ve made this 4 times now, and never have leftovers! My family loves this dish. Fall apart tender & love walking in the door after work when I make this – it smells soo good!
