When my kiddos get home from school, they are really hungry! Sometimes, they even raid their lunch pails in the car for lunch leftovers. I’ve been taking advantage of this after school hunger to offer them some really yummy snacks. I find they are more willing to try new things and are not as picky as usual. I thought it would be fun to create a homemade ranch dip with greek yogurt and serve it with a rainbow of veggies!
This greek yogurt ranch dip is so tasty. With just a few simple ingredients, you have a fresh and fun dip. The secret is freshly grated onion and garlic – you only need a small amount of both, but it really gives the dip that signature ranch flavor. Traditionally, this dip would include buttermilk, but the greek yogurt provides the tanginess.
I added one tablespoon of mayonnaise to the recipe to give it an extra creamy texture, but if you want to go completely fat free, just leave the mayo out. It’s really flavorful both ways!
I used a set of rainbow cupcake liners I had on hand to divide up the veggies. They were a big hit! My kids loved how colorful and fun everything looked. I used a small pre-made veggie tray from the grocery store, and just subbed in my homemade greek yogurt ranch dip. With all the prep work done, our little veggie party took just minutes to set up. I also threw in a few baked chips and cubes of cheese to give them a little dipping variety. Along with the greek yogurt ranch dip and the rainbow of veggies, I surprised them with Capri Sun Super V Fruit and Vegetable Juice Drink. - 1 cup of plain non fat greek yogurt
- 1 tablespoon of mayonnaise
- 1 tablespoon of freshly chopped italian parsley
- 1 teaspoon finely grated yellow onion
- 1/8 teaspoon of finely grated garlic
- 1/2 teaspoon of kosher salt
- Freshly ground black pepper to taste
Use smallest holes on a box grater, or a microplane to grate onions and garlic.You just need a tiny bit of garlic.
Stir all ingredients together in a small bowl.
Refrigerate for about an hour to let flavors develop.
Serve with fresh veggies!
