I just had to share this One Pot Sausage and Shrimp with Rice. It’s a really quick and easy dinner to throw together, and it is so tasty! Smoked sausage and fresh shrimp combined with rice is a flavor packed comfort meal that your family will love. You can even add a little kick by sprinkling in some cayenne pepper.
I love one pot meals, like my Chicken Alfredo and my Cheeseburger Casserole. They are just so perfect for busy weeknights. This one pot sausage and shrimp with rice makes a big pot, and the leftovers are great the next day!

- 1 pound of peeled and deveined uncooked shrimp
- 1 pound of smoked sausage sliced
- 1 small onion diced
- 2 cups of extra long grain rice uncooked
- 4 cups of low sodium chicken broth
- 2 cups of water
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 1 teaspoon of Lawry's Seasoned Salt
- Black pepper to taste

In a large pot, sauté onions, sliced sausage and seasoned salt in olive oil and butter until onions are softened.

Add uncooked rice to pot and sauté for 2-3 minutes.

Add chicken broth and water to pan, bring to a boil, then cover and simmer about 30 minutes until rice is tender.

Once rice is tender, stir in uncooked shrimp and let cook through, about 2-3 minutes.

Season with black pepper and additional seasoned salt, if needed.

Do I need to add as much liquid using short grain rice

If you are going to use brown rice don’t add the 2 extra cups of water. Out becomes somewhat of a soup lol. Very good tho despite how it turns out lol. Will make it better next time.

Can I use Italian sausage instead of smoked?
We made this tonight and my biggest recommendation for anyone is to only use 4 or 4 1/2 cups of water! With only 2 cups of rice, 6 cups of water is way too much. I only put 5 in and my rice still turned out way mushy. Next time I will do 4. But the flavor and everything else in the recipe is great! We added some Cajun seasoning to individual plates which was delish. And we ate with steamed cheesy broccoli. Mmmmm.
I mean 4 cups of liquid in general* not water. I used only chicken stock, no water. But yah 4 cups of liquid instead of 6!
Absolutely delicious! An instant favorite in this house. My daughter took one bite and said it needed to go into the weekly rotation! It’s so easy to make which is perfect for a weeknight meal. And a one-pot meal is so easy for clean up! You can double the sausage if someone doesn’t like shrimp (or is allergic) or swap leftover cooked chicken for a change.
Highly recommend giving this a try!
I just made this again tonight and I made it according to the recipe except the onion, I’m not a fan of onions. The rice does come out a little mushy but that’s the way my family likes it. My oldest daughter constantly asks me to make the shrimp with the mushy rice for dinner lol.
