2tablespoonsolive oil
1 1/4poundchicken breast tenderloins
1teaspoonkosher salt
1/2teaspoonfreshly ground black pepper
1teaspoonpaprika
1/2cupbell pepperfinely diced
1/2cupred onionfinely diced
3clovesgarlicminced
3cupslow-sodium chicken broth
1/2cupheavy cream
1 1/2cupsorzouncooked
1cupparmesan cheesefreshly shredded
2cupsbaby spinach
fresh parsley for garnish
Instructions
Season chicken all over with kosher salt, black pepper, and paprika. Heat olive oil over medium heat and brown chicken lightly on both sides. Set chicken aside to be added back in later step. Note: Chicken will not be cooked through at this point.
Add bell pepper and onion to oil and cook until they start to soften, about five minutes. Add garlic to pan and cook for another minute. Increase heat to medium-high and stir in chicken broth and heavy cream. Bring to a simmer.
Once chicken broth mixture starts to simmer, stir in orzo and reduce heat to medium-low. Return chicken to pan and cover. Let simmer, covered, for 15 - 20 minutes or until orzo is tender and chicken is cooked through. Turn off heat and stir in parmesan cheese and baby spinach. Taste and adjust salt and pepper as needed. Top with fresh parsley and serve.
