Ingredients

  • 3 Chicken Breasts cut in half lengthwise
  • Salt and Pepper
  • 1/2 teaspoon Garlic Powder
  • 2 Tablespoons Olive Oil
  • 3/4 cup low-sodium chicken broth
  • 1 5.2 oz block Garlic and Herb Boursin Cheese at room temperature
  • Parsley

Instructions

  • Season chicken on both sides with salt, pepper, and garlic powder and pat dry. Heat olive oil over medium high heat. Brown chicken breasts on both sides until chicken is cooked through and internal temperature reaches 165℉. Note: You may need to cook chicken in two batches depending on size of pan.
  • Remove chicken breasts from pan and set aside. Deglaze pan with broth, scraping up brown bits from pan. Reduce heat to medium-low and add room temperature Boursin cheese to liquid and whisk until melted.
  • Taste sauce and adjust salt and pepper as needed. Return chicken to skillet and spoon sauce over chicken. Sprinkle with fresh parsley.
