One-Pot Baked Ziti

Ingredients

  • 2 tablespoons of olive oil
  • 1/2 of a large white or brown onion diced
  • 3 cloves of garlic minced
  • 1 pound hot Italian turkey sausage
  • 2 tablespoons of tomato paste
  • 8 oz uncooked ziti or penne pasta
  • 1 28 oz can of crushed tomatoes
  • 1 14.5 oz can low-sodium chicken broth
  • fresh flat leaf parsley or basil leaves
  • 2 cups of freshly shredded mozzarella cheese
  • 1/2 cup of freshly grated parmesan cheese
  • kosher salt and freshly ground black pepper

Instructions

  • In a 4 quart saute pan, saute onions and garlic over medium heat until onions start to soften.
  • Remove turkey sausage from casing and add to pan, breaking up as it cooks.
  • Once sausage is cooked through, stir in tomato paste.
  • Stir in crushed tomatoes, chicken broth, uncooked pasta, 1/2 teaspoon of salt and several turns of freshly ground black pepper.
  • Bring up to a simmer, cover and reduce heat to low.
  • Let cook for about fifteen minutes, just until pasta is tender and sauce has thickened.
  • Season with additional salt and pepper as needed.
  • Remove lid and stir in fresh herbs and top with cheese.
  • Replace lid and let stand covered off heat until cheese has melted.
