1poundchicken breastssliced thin
1/4cupall-purpose flour
2tablespoonsolive oil
2tablespoonsbutter
4clovesgarlicminced
1/4teaspooncrushed red pepper flake
2cupslow-sodium chicken broth
1cupheavy cream
1/4cupjulienne sun dried tomatoes in oildrained
1/2teaspoonitalian seasoningno salt added
8ozpenneuncooked
1cupParmesan cheesefreshly shredded
fresh basil
kosher salt
freshly ground black pepper
Instructions
Pat chicken breasts dry. Season with salt and pepper and dredge through flour. Shake off excess flour. Heat olive oil over medium high heat and brown chicken on both sides. Once chicken is browned, remove from pan and set aside. Chicken will not be cooked through at this point.
Reduce heat to medium and add butter to pan followed by garlic and crushed red pepper flake. Sauté 1-2 minutes. Then add chicken broth, heavy cream, sun dried tomatoes, Italian seasoning, 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper. Increase heat to medium high and stir scraping up browned bits from bottom of pan.
Once broth and cream mixture starts to simmer, stir in uncooked pasta and top with chicken breasts. Cover and reduce heat to medium low. Cook for about 20 minutes until pasta is tender and chicken breasts have reached 165℉.
Remove chicken breasts from pan and set aside to rest. Reduce heat to low and stir in parmesan cheese and fresh basil. Slice or dice chicken breasts, stir into pasta and serve.
