One-Pot Shrimp Scampi and Orzo

Ingredients

  • 2 tablespoons olive oil
  • 1 pound large shrimp peeled and deveined
  • 2 lemons
  • Kosher Salt and Freshly Ground Black Pepper
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 teaspoon crushed red pepper
  • 1/4 cup white wine dry
  • 3 cups low-sodium chicken stock
  • 1 cup orzo uncooked
  • 1 cup parmesan cheese
  • 1 1/2 cups baby spinach
  • parsley for garnish

Instructions

  • Heat pan to medium heat. In a medium-sized bowl, toss uncooked shrimp with olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon of freshly ground pepper. Add to hot pan and cook for 2-3 minutes on each side, just until shrimp are pink. Squeeze 1 tablespoon fresh lemon juice over shrimp. Remove shrimp from pan and set aside to be added back in after orzo cooks.
  • If there is any excess liquid left in the pan from cooking the shrimp, drain. Melt butter in pan and add garlic. Let garlic sauté 1 minute, then add crushed red pepper and cook for another minute. Add wine to pan and increases heat to medium-high. Bring to a simmer and let wine reduce by half. Spoon out 2 tablespoons of garlic butter wine mixture and reserve to brush over shrimp before serving.
  • Add chicken broth, 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper, and orzo. Bring to a simmer, cover, and reduce heat to medium- low. Cook 10-12 minutes until orzo is tender and liquid is mostly absorbed. Remove from heat and stir in parmesan and baby spinach. Taste and adjust seasoning as needed. Return shrimp to pan, brush with garlic butter wine mixture, and let heat through. Top with fresh parsley and garnish with thinly sliced lemons.
