Pumpkin French Toast Recipe

Ingredients

  • 4 eggs lightly beaten
  • 3/4 cup milk
  • 1/2 cup 100% pure pumpkin puree
  • 2 tablespoons brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • pinch kosher salt
  • 10 slices thick sliced wheat or white bread
  • 4 tablespoons butter for griddle divided
  • pure maple syrup for serving

Instructions

  • Preheat non stick griddle to 325 degrees.
  • In a large bowl or shallow dish, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, pumpkin pie spice and kosher salt. 
  • Melt butter on griddle. Dip french toast in egg mixture, shake off excess and place on griddle. Repeat in batches. 
  • Cook until light golden brown and fluffy. 
  • Serve with additional butter and warm maple syrup.
