Sausage and Tortellini Soup

Ingredients

  • 2 tablespoon of olive oil
  • 1/2 of a large onion diced
  • 2 medium carrots peeled and diced
  • 3 cloves of garlic minced
  • 1 teaspoon of salt and freshly ground black pepper to taste
  • 19 oz Hot Italian Turkey Sausage casings removed
  • 1 quart low-sodium chicken broth
  • 1 28 oz can of crushed tomatoes
  • 1 9 oz package of fresh cheese tortellini
  • 4 cups of baby spinach

Instructions

  • Start by sautéing carrots and onions in olive oil over medium heat until they start to soften, 5-8 minutes.
  • Add garlic and sauté about a minute more.
  • Add salt and pepper.
  • Increase heat to medium high and add turkey sausage, breaking up as it cooks.
  • Once sausage is cooked through, add chicken broth and canned tomatoes.
  • Bring to a boil, then turn down to a simmer.
  • Add tortellini and let simmer gently until cooked through, about 5-8 minutes.
  • Remove from heat and stir in spinach.
