Sheet Pan Shrimp Scampi

Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 pound asparagus medium sized, ends trimmed
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon freshly ground black pepper divided
  • 1/4 teaspoon crushed red pepper
  • 1 lemon
  • 2 tablespoons flat leaf parsley for garnish
  • 1/4 cup parmesan cheese freshly grated
  • 1/4 loaf french bread

Instructions

  • Adjust oven rack to upper third position and preheat oven to 425℉. In a small saucepan, melt butter. Add garlic and crushed red pepper and saute 1-2 minutes over low heat. Brush french bread liberally with half of melted butter and top with parmesan cheese. Arrange on sheet pan.
  • Toss shrimp with remaining garlic butter, 1/2 teaspoon kosher salt, and 1/4 teaspoon of freshly ground black pepper and arrange on half of sheet pan.
  • Drizzle asparagus with olive oil and season with 1/2 teaspoon of kosher and and 1/4 teaspoon of freshly ground black pepper. Arrange asparagus between shrimp and garlic bread.
  • Roast for 10-12 minutes, or until shrimp is cooked through, asparagus is tender, and bread is lightly browned. Squeeze fresh lemon juice over shrimp and sprinkle with fresh parsley.
