Zucchini and Parmesan Pasta

Ingredients

  • 4 small or 2 large zucchini
  • 2 tablespoon of olive oil
  • 1 pound of fettuccine or spaghetti
  • 2 cloves of garlic minced
  • kosher salt and freshly ground pepper to taste
  • 1 cup of freshly shredded parmesan cheese

Instructions

  • Start by shredding zucchini using largest holes on a box grater.
  • Cook pasta according to directions on box.
  • In a large saute pan, heat olive oil over medium heat.
  • Saute garlic for 1-2 minutes until softened but not browned.
  • Add zucchini to pan and season with 1/2 teaspoon of salt and pepper to taste.
  • Sauté for about five minutes, just until tender.
  • Add cooked pasta to pan and mix to combine.
  • Stir in parmesan cheese and season with additional salt and pepper as needed.
