- I use my stand mixer for this recipe, but it can be mixed by hand or with a hand mixer. Whatever methods you use, only mix until combined to ensure the bread is tender. A lumpy batter is fine.
- I’ve switched to using a folded loaf pan, versus a molded loaf pan, and I love the results. It makes a nicer shape and forces the top of the loaf to rise a little higher.

- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 2 tablespoons turbinado sugar optional for topping
Instructions
- Adjust oven rack to middle position and preheat oven to 350℉. Line an 8.5 x 4.5 loaf pan with parchment paper. In the bowl of a stand mixer fitted with paddle attachment, combine mashed bananas, pumpkin, brown sugar, oil, eggs, and vanilla extract. Mix on medium speed until well combined, about two minutes. Scrape down sides as needed.
