This recipe will have you in the Christmas spirit and enjoying a fresh, warm Christmas cookie in just a few minutes. Bonus: You don’t have to make a whole batch! If you are skeptical of microwave recipes, you need to try my chocolate chip cookie in a cup and my brownie in a cup! These recipes really work and the results are delicious!
Start by melting one tablespoon of butter in a microwave safe mug. Just heat the butter until it is melted, not boiling. Please note, you need real butter for this recipe. Spreads will not work.
Add sugar, vanilla, and salt, and stir until combined.
Add one egg yolk to the mug and stir until combined. Set aside egg white to use in another recipe or discard. It’s important that you do not use the egg white as it will get rubbery in the microwave.
Stir in three level tablespoons of all-purpose flour.
Then add non-pareils or sprinkles, and stir a final time.
Now you have a perfect portion of freshly made cookie dough.
Cook in the microwave for 40-50 seconds. Cooking times in microwaves really vary, but keep in mind that the cookie will continue to cook as it cools. Just like a regular oven baked cookie, the cookie will be slightly soft and puffy when it comes out of the microwave and will get chewier as it cools, so don’t over bake. Christmas Cookie in a Cup is best served warm.

If you add a dash of milk or something it would probably be less dry. Not that it is too dry it just lacks some moistness
