It’s that time of the year again when you can find everything pumpkin spice! One of my favorite, sometimes hard to find, pumpkin spice goodies are the these Pumpkin Spice Bagels. They are the perfect fall breakfast! So when Thomas’ asked me to create a recipe with their Pumpkin Spice bagel, I was very excited and knew exactly what I was going to make. Â These Cranberry Turkey Sandwiches are our one of our favorite recipes and before Thanksgiving, I always make sure I have the supplies on hand to make these sandwiches with the delicious turkey leftovers.
If you haven’t already tried them, Thomas’ Pumpkin Spice Bagels are delicious all on their own. I noticed a the lady behind me buying three bags at Target the other day!
To build this delicious sandwich, start with a layer of cream cheese.
Then add those tender leaves of baby spinach.
Then pile high with turkey. Use fresh good quality turkey meat from the deli counter or leftover Thanksgiving turkey for best results.
Finish with cranberry sauce and another layer of cream cheese and serve. These sandwiches can also be wrapped tightly in plastic wrap and refrigerated.
- 2 Thomas' Pumpkin Spice Bagels
- 4 oz of cream cheese
- 1/2 pound of good quality roasted turkey sliced thin
- 1/2 cup of baby spinach leaves
- 1/2 cup of homemade cranberry sauce or canned whole berry cranberry sauce

Spread cream cheese on both side of bagel.

Layer baby spinach, stems removed, over cream cheese.

Add turkey and top with cranberry sauce.

Place top of bagel on sandwich and serve.

I actually have pumpkin bagels on my to make list and I would love to use Thanksgiving leftovers + the bagels to make this! But if I am feeling lazy or the bagels fail at least I know where to get a good substitute
