Creamy Italian Sausage and Tortellini Soup
This easy to make recipe is the perfect cozy, creamy soup. Everything cooks in one pot, and it’s absolutely packed with flavor. Hearty Italian sausage, hot or sweet, paired with fresh cheese tortellini in a creamy, flavorful broth. Stir in fresh kale or baby spinach to make it a complete meal.

Ingredients for Creamy Italian Sausage Tortellini Soup
- Olive Oil or Sun-Dried Tomato Oil – since we are using sun-dried tomatoes in the recipe, the oil can add another layer of flavor.
- Chopped Onion
- Diced Carrot
- Diced Celery
- Minced Garlic
- Crushed Red Pepper Flakes– add according to taste, depending on whether you are using sweet or hot Italian sausage.
- Italian Sausage – sweet or hot, depending on your preference. If you have cooked sausage, skip the browning step and proceed with the recipe.
- Flour – helps thicken the soup and makes it more satisfying.
- Kosher Salt and Black Pepper
- Italian Seasoning – or a blend of dried or fresh rosemary, thyme, and oregano.
- Chicken Broth – use low-sodium chicken broth and add salt as needed.
- Sun-Dried Tomatoes – drained and finely diced. Canned tomatoes can be substituted. Use a 15 oz can of petite diced tomatoes, drained.
- Heavy Cream
- Tortellini – in this recipe, I used fresh tortellini from the refrigerated section of the grocery store. Any other kind of similar fresh stuffed pasta would work – ravioli, sacchetti, or tortelloni.
- Kale – or Baby Spinach.
- Parmesan – for topping.

- Start by sautéing the vegetables.
- Then add sausage to pot, breaking up as it cooks.
- Sprinkle in flour.
- Add chicken broth, sun-dried tomatoes, and seasonings. Bring to a boil over medium-high heat, then reduce heat and let simmer until it starts to thicken and vegetables are tender.
- Add tortellini, heavy cream, and kale, and simmer until tortellini is tender.
- Serve in a deep bowl with fresh parmesan and crusty bread.

Recipe Tips
- For a lighter soup with the same flavors, try using Italian turkey sausage, or ground turkey, and half-and-half instead of heavy cream.
- Use a 5-quart dutch oven, or larger, for this recipe.
- This soup can have varying degrees of spice depending on your preference. For no spice, use mild Italian sausage and no crushed red pepper.

Make Ahead & Freezer Instructions
For best results when making ahead, prepare the vegetables and broth. Let cool and refrigerate. Reheat when ready to serve and add cream, tortellini, and kale right before serving.
To freeze, use the same method and freeze the broth separately, adding the tortellini before serving. Tortellini can be frozen separately.

Ingredients
- 2 tablespoons olive oil or sun dried tomato oil
- 1 cup yellow onion diced
- 1/2 cup carrot diced
- 1/2 cup celery diced
- 4 cloves garlic minced
- 1/4 teaspoon red chili flakes optional
- 1 pound italian sausage
- 1/4 cup flour
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon italian seasoning
- 8 cups low sodium chicken broth
- 1/4 cup sun dried tomatoes drained and diced
- 1/2 cup heavy cream add more according to taste
- 18 oz tortellini refrigerated
- 2 cups kale chopped and stems removed
- Parmesan cheese topping
Instructions
- Heat oil over medium heat and sauté onions, carrots, and celery until they start to soften. Add garlic and chili flakes, if using, and sauté for another minute.
- Add sausage to pan, breaking up as it cooks. Sprinkle flour into sausage mixture and cook for 1-2 minutes. Stir in chicken broth, sun-dried tomatoes, salt, pepper, and Italian seasoning, and bring to a simmer. Reduce heat to medium low, and let simmer for 20 minutes until vegetables are tender and broth has thickened slightly.
- Stir in heavy cream, tortellini, and kale. Let simmer until tortellini are tender. Taste and adjust seasoning as needed. Top with parmesan.
