A few weeks ago, I read a comment that said one pot meals are the new casserole. It’s so true! I still love a good casserole, but these one pot meals are pretty hard to beat, especially on busy weeknights. Everybody loves an easy dinner, so I’ve rounded up my favorite one pot meals from my site. Almost all are ready in under thirty minutes and you are left with just one pot to clean. I like to make my own sauces, so you won’t find any cream of soups or jarred spaghetti sauces in these recipes. (In few, I do use premade enchilada sauce!) i just made the one pot chicken burrito and it was a hit with the family. Great recipe! My modifications are as follows:
1. Used basmati rice instead of long grain and soaked in water for 15 min before sautéing in the oil.
2. Used ginger-garlic paste instead of garlic powder
3. Added 1/2 tsp turmeric powder with the other spices
4, Added the spices i.e. turmeric, ginger-garlic, cumin powder, chilli powder, salt to the onions before adding the chicken. We use a lot of spices on a regular basis so I added more quantity of each spice than recommended.
Next time, I will use only 2 1/4 cups chicken stock instead of 2 1/2 because I’m using soaked basmati rice.
