Have you tried the White Chocolate Peppermint M&M’s? They are so good, I knew I had to make a cookie with them as soon as possible. They were just calling for a rich, chewy chocolate cookie. These cookies are a cup of hot chocolate’s best friend.
White Chocolate Peppermint M&M CookiesÂ

Makes about 14 large cookies
Ingredients
14 tablespoons of melted and cooled butter
3/4 cup of granulated sugar
3/4 cup of firmly packed dark brown sugar
1/2 a cup of Hershey’s unsweetened cocoa
1 teaspoon of kosher salt
1 teaspoon of vanilla extract
1 teaspoon of peppermint extract
1 large egg
1 large egg yolk
1 3/4 cup of all-purpose flour
1/2 teaspoon of baking soda
1 bag of White Chocolate Peppermint M&M’s
Directions
Preheat oven to 350 degrees.
In the bowl of a stand mixer, combine butter, sugars, cocoa, salt, vanilla extract and peppermint extract. Stir on low just until combined. Continue stirring and add eggs one at a time. Then add flour and baking soda to bowl and stir just until dough forms.
Form two tablespoons of dough into balls and place on cookie sheet. Place ten White Chocolate Peppermint M&M’s on top of each cookie dough ball and bake for about ten minutes. Remove from oven and let cool.
Recipe Notes: You may have to flatten dough balls slightly to fit all the M&M’s on the top. I usually use parchment paper to line my baking sheets, but found myself without any while I was baking these cookies. I didn’t have a problem with sticking.

How do you keep your m & m’s out shells from melting? The last several times I have tried to make cookies with m & m’s the color melts off and they look awful. The red and green one turn into pink and light green. I even tried the baking bits and they did the same thing.

Hmmm, well I’m not sure what the difference would be. I don’t mix them into the dough, just press them on top. Maybe that would make a difference for you?
Would these have the same effect without the peppermint extract?

I think you can get away with substituting vanilla extract! The M and M’s are pretty strong, either way they will still be yummy!

As if I hadn’t done enough holiday baking, I made these today. I found the recipe on Pinterest several weeks ago and have had it on my baking “to do” list ever since. I loved these cookies. I followed your recipe exactly, except for the type of M&Ms. I could only find red and green plain M&Ms. But ultimately, that was fine. The only issue I had was my own: I thought my baking soda was a little old so I add about 3/4 t instead of 1/2 t. As a result my cookies were a bit more cake like that I would have wanted. But the flavor was exactly what I was looking for and I love that they’re large cookies. Will make more soon. Can’t wait!
