Ingredients

  • 1 15 oz can black beans drained and rinsed
  • 2 cups corn
  • 2 cups cherry tomatoes cut in half
  • 1/2 cup red onion finely diced
  • 1 jalapeno seeded and finely diced
  • 1 clove garlic minced
  • 1/2 cup cilantro chopped
  • 2 tablespoons lime juice fresh
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1 avocado diced

Instructions

  • In a large bowl, combine all ingredients except for avocado. Stir to combine. Add diced avocado to top of salad right before serving.

Notes

Taste and adjust salt and lime juice as needed.
