Ingredients
1poundlean ground beef
1/2cupseasoned breadcrumbs
1/2oniongrated
1clovegarlicminced
1egg
2teaspoonskosher saltdivided
1/2teaspoonblack pepperdivided
2tablespoonsolive oil
14.5oz canlow sodium beef broth
2cupsmilk.For best results use 2% or whole milk.
1tablespoonWorcestershire sauce
4cupsegg noodles
1cupparmesan cheesefreshly shredded
fresh parsleyfor garnish
Instructions
In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, 1 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper. Use a fork to gently combine meatball mixture to avoid over-mixing. Gently shape into about 20 meatballs.
Heat olive oil in large skillet and brown meatballs on each side. They do not need to be cooked all the way through at this point.
Add beef broth to pan scraping up browned bits from the bottom, then add milk, Worcestershire sauce and remaining teaspoon of kosher salt and 1/4 teaspoon of black pepper. Bring milk to a simmer, then add uncooked egg noodles and simmer for another 8 minutes uncovered on medium heat until noodles are tender. Remove from heat and stir in parmesan cheese and garnish with parsley.
