  • 1 3/4 cups flour all-purpose
  • 3/4 cup Hershey's Cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup water boiling

Frosting

  • 1 cup butter softened
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract
  • pinch salt
  • 1/4 cup heavy cream
  • 8 Oreo cookies crushed

Decorations

  • Oreo Cookies
  • Junior Mints
  • Mini Oreo Cookies
  • Brown M&M'S
  • Black Licorice Nibs

Instructions

Cake

  • Preheat oven to 350 degrees. Grease 9x13 cake pan and dust with cocoa powder. In a large mixing bowl, combine sugar, flour, cocoa, baking powder, baking soda ansd salt and whisk together. Add eggs, milk, vegetable oil and vanilla extract and beat with a hand mixer until well combined, scraping bottom of bowl as needed. Slowly add boiling water and mix until combined. Bake 35-40 minutes. Let cake cool completly before frosting.

Frosting

  • In the bowl of a stand mixer fitted with a paddle attachment, beat butter and powdered sugar until smooth. Add vanilla extract, salt and heavy cream and mix until smooth. Stir in crushed Oreos. Reserve a small amount of frosting to use as adhesive for the cookie eyes.

Spooky Eyes Decorations

  • While the frosting is still soft, carefully separate Oreo cookies and place them cream side up on top of cake. Use a small dab of frosting to adhere Junior Mints to full sized Oreo cookies and M&M'S to mini Oreo cookies.
  • If adding eyebrows, cut black Nibs into quarters length wise and place over eyes.
  • Store cake covered. If making ahead, frost cake and wait to add eye decoration until day of serving.

Notes

For this recipe, I used a hand mixer for the chocolate cake batter and a stand mixer for the frosting. You can use a hand mixer or a stand mixer for either one interchangeably.
