If you need a fun Halloween cake idea, this one is perfect! I love how fun and easy the eyes are to make. I used my favorite chocolate cake and Oreo buttercream recipe, but you could use cake mix and store bought frosting. The homemade cake and frosting in this recipe are my absolute favorites, and I highly recommend trying them. But the fun decorations are the best part!

How to Make a Spooky Eyes Halloween Cake
- Smooth the frosting evenly across the top of the cake so it is as level as possible.
- Separate the Oreo cookies and place cream side up on freshly frosted cake. I used a mixture of mini Oreo cookies and regular Oreo cookies.
- Use a dab of frosting to secure Junior Mints on full sized Oreo cookies and brown M&M’S on mini Oreo cookies.
- If making ahead, frost and store tightly covered. Decorate before serving. You can decorate the day ahead  but the Oreo cookies will get soft.
Play around with the placement to give the eyes different expressions. This was my favorite part!
Just the smallest change in placement makes the expressions totally different.
I also tried adding eyebrows and it turned them into ANGRY EYES! ? What do you guys like better? Angry eyes or spooky eyes?

- 2 cups sugar
- 1 3/4 cups flour all-purpose
- 3/4 cup Hershey's Cocoa
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup water boiling
- 1 cup butter softened
- 1 pound powdered sugar
- 1 teaspoon vanilla extract
- pinch salt
- 1/4 cup heavy cream
- 8 Oreo cookies crushed
- Oreo Cookies
- Junior Mints
- Mini Oreo Cookies
- Brown M&M'S
- Black Licorice Nibs

Preheat oven to 350 degrees. Grease 9x13 cake pan and dust with cocoa powder. In a large mixing bowl, combine sugar, flour, cocoa, baking powder, baking soda ansd salt and whisk together. Add eggs, milk, vegetable oil and vanilla extract and beat with a hand mixer until well combined, scraping bottom of bowl as needed. Slowly add boiling water and mix until combined. Bake 35-40 minutes. Let cake cool completly before frosting.

In the bowl of a stand mixer fitted with a paddle attachment, beat butter and powdered sugar until smooth. Add vanilla extract, salt and heavy cream and mix until smooth. Stir in crushed Oreos. Reserve a small amount of frosting to use as adhesive for the cookie eyes.

While the frosting is still soft, carefully separate Oreo cookies and place them cream side up on top of cake. Use a small dab of frosting to adhere Junior Mints to full sized Oreo cookies and M&M'S to mini Oreo cookies.

If adding eyebrows, cut black Nibs into quarters length wise and place over eyes.

Store cake covered. If making ahead, frost cake and wait to add eye decoration until day of serving.
For this recipe, I used a hand mixer for the chocolate cake batter and a stand mixer for the frosting. You can use a hand mixer or a stand mixer for either one interchangeably.Â
