Remove and set aside about 2/3 of the chocolates to make room for the charcuterie ingredients.
Assemble salami roses and prosciutto roses and arrange in box.
Use a small heart shaped cookie cutter to cut brie and gouda. If needed, place cheeses in the freezer for a few minutes to make cutting easier. Place heart shaped cheese in box.
Arrange rest of ingredients as shown filling in with extra berries.
