Nutella Cookie in a Cup

I am so excited to share this Nutella Cookie in a Cup recipe! Nutella is pretty much heaven on earth, so to have a quick and yummy dessert in just a few minutes, well, that is even better. I’ll share the step-by-step, then the entire recipe at the end. Get ready to have a warm and decadent Nutella cookie in less than 5 minutes, using your microwave!

Start with a microwave safe mug, a tablespoon of butter and one big heaping tablespoon of Nutella. I love this picture!

Melt the butter and Nutella together in the microwave, about thirty seconds. Add two firmly pressed rounded tablespoons of brown sugar, 1/2 teaspoon of unsweetened cocoa powder, a small pinch of kosher salt and 1/4 teaspoon of pure vanilla extract and stir together well.

Then add the yolk from one large egg, and stir again. Do not use the egg white, it makes the cookie gummy and cake like. Add 1/4 cup of all-purpose flour and stir together again.

Side note: I keep my flour in a a large container in my pantry, so I always use a whisk to aerate it before I scoop any out. This keeps it from getting too packed down, which in turn would cause you to get more flour packed into your measuring cup. To aerate your flour, simply use a whisk to stir it up in your storage container and it will be light and loose when you scoop the flour out.

Now that you have stirred in the flour, you have a nice thick cookie dough. 

I crushed up some toasted hazelnuts and sprinkled them on top. You can also use peanuts, or skip a topping all together. It’s delicious either way!

Now pop it in the microwave for about a minute, more or less depending on the strength of your microwave! It will be very hot and continue to cook in the cup when you take it out, so don’t be tempted to over cook it! When you first take it out, it will be very soft, but as it cools it will get that yummy chewy cookie texture.  

Nutella-y goodness is a matter of minutes. Heavenly!

  2. Do you think that this recipe could be adapted/made with either almond flour or coconut flour for us poor celiac sufferers? I would be subbing splenda too…

    I just used to love sugar cookies but now that I am sugar and grain free, all I can do is drool!

    also….we just ran out of brown sugar, so I’m using white. I think this makes it less chewy?
