Roasted Tomato Soup with Parmesan Popcorn

Our tomato plants are producing like crazy right now, and last week we were hit with some unseasonably cool weather. It was perfect timing for Roasted Tomato Soup. This is a great way to use up those not so pretty, or slightly overripe tomatoes.

Start by coring and cutting your tomatoes into chunks. Quarter a large onion and add 4 whole garlic gloves to a large roasting pan. Make sure it is nice and deep because the tomatoes will release a lot of juices.  If the pan is shallow, you might have a mess on your hands. Drizzle tomatoes, onions, and garlic with 1/2 a cup of olive oil, 1 teaspoon of kosher salt, and a few turns of pepper.

Roast at 425 for about 30 minutes, until the tomatoes have started to caramelize.

Add tomato mixture, a quart of chicken stock, and 2 tablespoons of butter to a large pot. Bring to a boil on the stove, then lower temperature and let mixture simmer for 20-30 minutes until reduced by half.

Use an immersion blender or a regular blender to puree mixture until smooth. If using a regular blender, be very careful blending hot soup and blend in small batches. Make sure the blender lid is slightly vented so the heat of the soup does not cause the lid to pop off. You do not want hot tomato soup all over you, or your kitchen!

Once the soup is smooth, pour back into pot and add 1/2 cup of heavy cream (optional) and adjust seasoning with salt and pepper.   Smooth and creamy, perfect with a grilled cheese sandwich.

Or if you want to try something different, sprinkle a little parmesan popcorn on top. I promise, you will love it!

Before my husband and I got married, we had a beer cheese soup sprinkled with popcorn at the ESPN zone in Las Vegas. I’ve been thinking about that soup for over ten years! It was delicious, and the popcorn was my favorite part.

Roasted Tomato Soup

  • 3 pounds of tomatoes
  • 4 garlic cloves, peeled and smashed
  • 1 large onion
  • 1/2 cup extra-virgin olive oil
  • Kosher salt
  • Pepper
  • 1 quart chicken stock
  • 2 tablespoons butter
  • 1/2 cup of heavy cream (optional)

Parmesan Popcorn
4 cups of air popped popcorn

2 tablespoons of melted butter

Kosher salt

Pepper

1/2 cup of finely grated parmesan cheese

Add melted butter, salt, pepper and cheese to plain popcorn and toss.

Sprinkle on soup, or enjoy as a snack!

I’ve made this soup twice now in the past week, and I’m happy to say my kids love it. So far, this is the only way they have eaten any of our garden tomatoes!
