To elevate the sandwich, brush and toast the rolls with a homemade garlic butter and quickly broil provolone cheese over the beef just until melted. The flavor-packed cooking liquid is strained and serves as the “au jus” used to dip the sandwiches.

- Chuck Roast – a 2.5 to 3 pound boneless chuck beef roast
- Oil – vegetable oil or another neutral oil for searing
- Onions – sliced onions are slow cooked along with the chuck roast. They season the dipping juice and can be strained and added to the sandwiches for extra flavor.
- Garlic – whole cloves added to the slow cooker.
- Bay Leaf – for extra flavor in the slow cooker.
- Beef Broth – low-sodium beef broth is preferred to control the amount of salt
- Red Wine – I like to use a red wine blend or a pinot noir. You can substitute additional beef broth for the wine.

- In a large cast iron skillet, sear the Chuck Roast on both sides over medium-high heat then sauté onions and deglaze pan with red wine.
- Cook the chuck roast in a slow cooker with the onions, wine, and beef broth.
- Remove roast from slow cooker and use a fork to shred, then strain cooking liquid to serve for dipping.
- Brush buns with garlic butter and toast on a baking sheet. Melt slice of cheese over shredded beef in the oven using the broiler. Pour warm au jus in a small bowl for dipping.

- The beef roast can cook on high for about 6 hours or low for 8 hours.
- To remove fat from au jus, after straining, place the cooking liquid in the freezer and spoon off and discard any fat or oils that rise to the top. Reheat to serve.

- 2.5 pound Chuck Roast
- Kosher Salt and Freshly Ground Black Pepper
- 1 tablespoon Vegetable Oil
- 1 large Onion sliced
- 1 cup Red Wine
- 2 cups Low-Sodium Beef Broth
- 2 cloves Garlic smashed
- 1 Bay Leaf
- 6 slices Provolone Cheese
- 6 Sandwich Rolls
- 3 tablespoons Butter
- 1/2 teaspoon Garlic Powder
- Fresh Parsley chopped

Pat chuck roast dry and season all over with 2 teaspoons of kosher salt and 1/2 teaspoon freshly ground black pepper. (Increase salt if using a roast larger than 2.5 pounds)

Heat oil in a large cast iron skillet over medium-high heat. Sear roast on both sides. Transfer roast to slow cooker and add onions to skillet. Saute 2-3 minutes just until they start to soften. Add red wine to skillet and let simmer until reduced by half.

Transfer onion and red wine mixture to slow cooker. Add beef broth, garlic, and bay leaf to slow cooker. Cook on high for 6 hours or low for 8 hours. Cooking time will vary, beef should be fork tender and shred easily.

Remove beef from slow cooker and strain juice to use for dipping. The onions will be very soft and can be added to the sandwiches.

Preheat oven broiler. Melt butter and stir in garlic powder. Place open rolls on baking sheet and brush with melted garlic butter. Broil just until they start to brown. Remove rolls and divide shredded beef onto each roll and top with cheese slices. Return to broiler and heat just until cheese is melted. Sprinkle sandwiches with fresh parsley and serve with warm au jus.
