Creamy Dijon Chicken and Orzo
Pan-seared chicken thighs (or chicken breast!) are cooked with orzo in a savory, creamy Dijon sauce that pairs perfectly with chicken. A sprinkle of crushed crispy fried onions adds a satisfying crunch and a touch of sweetness. Stir in a handful of baby spinach at the end for a veggie serving. Skillet chicken and orzo dinners are one of my go-to combinations. I love coming up with new flavors and textures that make a true one-pot meal. Protein, carbs, and veggies are a must, but adding extra layers of flavor and texture make it a meal you can come back to, and even serve to company!

Ingredients for Creamy Dijon Chicken and Orzo
- Olive Oil – for browning the chicken. If you would like to use butter, keep the heat at medium so it doesn’t burn.
- Chicken – boneless Skinless Chicken Thighs or Thinly Sliced Boneless Skinless Chicken Breasts.
- Kosher Salt and Freshly Ground Black Pepper
- Shallot – or finely diced onion
- Garlic – freshly minced
- White Wine – use a dry white wine, like Chardonnay, Sauvignon Blanc, or Pinot Grigio. Substitute wine with additional chicken broth, if preferred.
- Low-Sodium Chicken Broth – or chicken stock
- Dijon Mustard
- Coarse Ground Mustard
- Heavy Cream
- Orzo
- Baby Spinach – chopped Kale would work as well.
- Crispy Fried Onions – store-bought fried onions, the kind you add to green bean casserole, crushed to make a tasty topping

How to Make Creamy Dijon Chicken and Orzo
- Toss chicken thighs with olive oil, salt, and pepper, and heat a large skillet over medium-high heat. Cook chicken until golden brown on both sides.
- Remove chicken and set aside.
- Sauté shallots and garlic, adding more olive oil if needed.
- Deglaze pan with white wine, scraping the brown bits from the bottom of the pan. Then stir in chicken broth, creamy mustard, and orzo.
- Add chicken back into pan with orzo and let simmer until chicken is cooked through and orzo is tender.
- Stir in baby spinach and top with crispy fried onions and parsley.

Creamy Dijon Chicken and Orzo
Equipment
- 3.5 quart skillet or braiser
Ingredients
- 2 tablespoons olive oil more if needed
- 1 1/2 pounds boneless skinless chicken thighs
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 shallot finely diced
- 3 cloves garlic minced
- 1/2 cup white wine
- 3 cups low-sodium chicken broth
- 1/2 tablespoon dijon mustard
- 1 teaspoon coarse ground mustard
- 1/2 cup heavy cream
- 1 1/2 cups orzo uncooked
- 2 cups baby spinach
- 1 cup crispy fried onions crushed for topping
- fresh parsley for garnish
Instructions
- Toss chicken thighs with olive oil, salt, and pepper. Heat pan over medium heat and brown chicken lightly on both sides. Set chicken aside to be added back in later step. Note: Chicken will not be cooked through at this point.
- If pan is dry, add another tablespoon of olive oil. Reduce heat to medium and saute shallots until soft and translucent. Add garlic and cook for another minute. Increase heat to medium-high and deglaze with white wine, letting reduce by half. Stir in chicken broth, heavy cream, and mustards. Bring to a simmer.
- Once chicken broth mixture starts to simmer, stir in orzo and reduce heat to medium-low. Return chicken to pan and cover. Let simmer, covered, for 15 – 20 minutes or until orzo is tender and chicken is cooked through. Cook time will depend on size of chicken thighs. Taste and adjust salt and pepper as needed. Turn off heat and stir in baby spinach. Top with crispy onions and parsley.
