You are going to love this super easy sheet pan chicken dinner, the flavors are so summery and fresh, and it truly could not be easier to throw together! You don’t even need a knife or cutting board. Roasted cherry tomatoes cook alongside a marinated chicken breast, then the chicken is topped with fresh sliced mozzarella cheese and a delicious balsamic glaze. Top with torn fresh basil. All the flavors of a classic caprese salad but made into an easy dinner!

Ingredients for Sheet Pan Chicken Caprese Recipe
- Chicken Breasts – boneless skinless chicken breast. Four small breasts about 1/2 pound each or two large one pound breasts cut in half lengthwise. This will ensure the cooking time for the chicken and cherry tomatoes is the same. Chicken thighs can be substituted if preferred.
- Olive Oil – to build the marinade and drizzle on the tomatoes.
- Red Wine Vinegar – to build the marinade. White Wine Vinegar, Apple Cider Vinegar, or Balsamic Vinegar would be a good substitute. If you don’t have any vinegar you can use fresh lemon juice.
- Garlic Powder – cloves of freshly minced garlic can be used instead.
- Onion Powder – sliced fresh onion can be used instead.
- Italian Seasoning
- Kosher Salt and Freshly Ground Black Pepper
- Fresh Mozzarella Cheese Slices – I like the sliced fresh mozzarella but any type of mozzarella cheese would work, including shredded.
- Fresh Basil – to avoid any chopping, use torn fresh basil.

How to Make Sheet Pan Caprese Chicken
- Marinate chicken: Whisk olive oil, vinegar, spices, and salt/pepper in a bowl. Marinate chicken breasts for 15 minutes.
- Roast tomatoes and chicken: Toss cherry tomatoes with olive oil, spices, and salt/pepper. Arrange on a baking sheet with chicken in the center. Season chicken again. Bake at 400°F for 20 minutes.
- Broil and serve: Top chicken with cheese and balsamic glaze. Broil for 3-5 minutes until cheese melts. Garnish with fresh basil and serve.

- This can be a light meal served with just a salad, or a fuller meal served over pasta with a salad.
- Cooking time will vary depending on size of chicken breasts. Use an instant read meat thermometer to ensure chicken is at the safe cooking temperature.

- 1 1/2 pounds cherry tomatoes washed and patted dry
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 4 oz fresh mozzarella
- fresh basil
- 1/4 cup balsamic glaze
Instructions
Chicken Marinade
- In a medium sized bowl, whisk together olive oil, red wine vinegar, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Coat chicken breasts and marinate for 15 minutes.
Chicken Caprese
- Preheat oven to 400℉ and adjust oven rack to upper third of oven. On an 18×13 sheet pan, toss cherry tomatoes with olive oil, garlic powder, kosher salt, and pepper. Arrange tomatoes around edge of sheet pan and place chicken breasts in center. Season chicken breasts lightly with additional salt and pepper.
- Bake chicken and tomatoes for 20 minutes, or until internal temperature of chicken is just shy of 165℉. Remove from oven and top with mozzarella and a drizzle of balsamic glaze. Turn on oven broiler and broil chicken for 3-5 minutes, watching to make sure it doesn't burn. Once cheese is melted sprinkle with fresh basil and serve.
