Loaded with flavor and so easy to make, Korean Ground Beef makes the perfect shortcut dinner or lunch. Lean ground beef browned, then simmered in an easy sauce made from soy sauce and brown sugar. I add shredded carrots and zucchini to make it a meal. This is the perfect meal when you don’t know what to make with your ground beef.

How to Make Korean Ground Beef
- Start by browning extra lean ground beef. If you use ground beef with a higher percentage of fat, you may need to drain the excess fat.
- Then add sesame oil and garlic and sauté for another minute or two.
- Add soy sauce, brown sugar, ginger, and black pepper. Let come to a simmer.
- Stir in shredded carrots and zucchini and let heat through.
- Garnish with sesame seeds and green onion. Serve with rice.

Recipe Tips and Substitute
- Shred zucchini and carrots using the large holes on a box grater.
- This makes a great pantry meal. If you have ground beef, brown sugar, soy sauce and rice you can still make the meal with substitutions.
- Sesame oil adds a great layer of flavor, but you can substitute olive oil.
- You can use just shredded carrots or just shredded zucchini, or skip the vegetables if you don’t have any on hand.
- If you don’t have ground ginger, you can skip that ingredient and still have plenty of flavor.

- 2 teaspoons sesame oil
- 3 cloves garlic minced
- 1/4 cup brown sugar firmly packed
- 1/4 cup soy sauce reduced sodium
- 1/4 teaspoon ground ginger
- freshly ground black pepper to taste
- 1/2 cup zucchini shredded
- 1/2 cup carrots shredded
- sesame seeds
- sliced green onion

In a large skillet, brown ground beef until cooked through. Add sesame oil and garlic and continue cooking for another 2 minutes.

Add soy sauce, brown sugar, ginger, and freshly ground black pepper and let some to a simmer. Stir in shredded zucchini and carrots and cook until heated through.
