English Toffee is one of my favorite Christmas treats and it’s one my Grandma used to make every year. This Saltine Cracker Toffee is an easy version of classic English Toffee. Perfect for a quick homemade treat, plus the recipe makes an entire sheet pan full so you can use it for gift giving.
Ingredients for Saltine Cracker Toffee
- 20 Saltine Crackers from a freshly opened package. You don’t want them to be stale.
- 2 sticks of butter – I prefer to use salted butter
- Dark Brown Sugar
- Chocolate chips – use semi sweet or milk chocolate, they both work great
- 1/2 cup Crushed Pecans
How to Make Saltine Cracker Toffee
- Preheat oven to 400º.
- Line an 18×13 baking sheet with aluminum foil and spray with non stick cooking spray.
- Lay 40 Saltine crackers out on baking sheet. They should fill the baking sheet perfectly.
- In a medium sized pot, heat butter and dark brown sugar over medium heat until melted. Then increase heat to high until mixture starts to simmer. Let mixture boil for 3 minutes.
- At three minute mark, turn off heat and quickly spoon toffee mixture over each cracker.
- Carefully place in oven and let cook for another 5 minutes.
- Remove from oven and top with one bag of chocolate chips. Let chocolate chips sit for 5 minutes, or until melted. Spread melted chocolate over top of crackers.
- Sprinkle with chopped pecans.
- Refrigerate until chilled and break into pieces.
Saltine Cracker Toffee Recipe Tips
- Use freshly opened Saltine crackers so they are still crispy.
- Spoon cooked toffee mixture over crackers rather than just dumping it in the middle of the sheet pan for even coverage.
- These are so fast to make so have all ingredients prepped before starting.
- You will also be working with a large sheet pan full of boiling toffee, so clear a safe place to set it down and make sure little ones are safely out of the way.
- Use whatever kind of chocolate chips you prefer. Milk chocolate chips will make them a little more family friendly and using semi-sweet chocolate chips will make them a little more elevated if you are gifting them to adults. I used Guittard Semisweet Chips recently and they felt very fancy! The taste of the chocolate was more bittersweet and contrasted nicely with the toffee.
- I crush the pecans in a small plastic baggie because that’s how my grandma served her English Toffee, but chopped pecans work perfectly too!
- Use extra wide foil to cover entire baking sheet. If using standard width foil, fold seam together lengthwise so none of the toffee mixture can slide under the seam.
